There is a choice of three restaurants at The Palm, all of them highly acclaimed, and all of them under the oversight of renowned French chef Yannick Alléno. One of the three, the stylish black-chandeliered Stay, is Alléno's own restaurant, and its most distinctive feature is the unique Pastry Library, showcasing irresistible dessert creations. Alléno likes to surprise guests with original signature dishes, demonstrating traditional cooking styles with a contemporary twist, and also with novel seating arrangements such as Conversation Tables and Sharing Tables.
One of Dubai's most fashionable and popular dining venues, at which non-Palm guests often arrive by water-taxi, is the ultra-chic 101, a decked jetty restaurant jutting into the sea, with over-the-water dining. The menu is Spanish-influenced seafood, including signature dishes such as paella with squid ink and calamari. The other restaurant, Zest, with outdoor seating overlooking the grand pool, serves Middle Eastern and Oriental fare from two live cooking stations.
